Bev and Ian Glen's roots run deep in the Scottish brewing and distilling industry. In 2006 the land of the green and gold was calling. Packing up their belongings, complete with their children and the dog, the duo bid soraidh alba; *farewell to Scotland; and made a move across the globe with the dream of establishing Bathurst's and becoming a handful of Australia's first, micro-distilleries.
Having an established background in biochemistry and a post-graduate diploma in Brewing and Distilling, Ian was well placed to realise the dream. Matched with the duo's love for a genuine premium quality product and use of the best raw materials, particularly Australian Native botanicals, Stone Pine Distillery was established.
Stone Pine Distillery specialise in Gin and Spiced Rum, utilising high-quality botanicals with an Australian native element.
Stone Pine Distillery came to life on the grounds of the historic homestead 'Merembra.' Dating back as early as 1840, 'Merembra' was, for a time, in the late 19th century, known as 'The Barley Mow Hotel'. After closing for roughly 140 years, the property once again hosts a liquor license, the birthplace of the distillery.
You could say it's been far and few between drinks for the old place!
At the front of the homestead lives a statuesque stone pine tree, which is thought to be of age with the house and, of course, naturally is the distillery's namesake.
Today, reducing environmental impact is of utmost importance to ensure a better future for tomorrow. Stone Pine Distillery utilises solar power and harvested rainwater in the distilling process. Additionally, reduction in environmental impact can be found with the buildings' solar passive design, high efficiency still and lighting, and use of recycled packaging materials (where possible).
