Stone Pine Distillery was established in 2008 with the aim of crafting high quality, innovative spirits and liqueurs in an environmentally friendly manner. Our mixed fruit and nut orchard, which is managed under organic principles, provides much of the raw material and is supplemented with other high quality ingredients, purchased locally where possible. The distillery is situated on the historic homestead of Merembra, which is listed on the NSW State Heritage Register as a site of State Significance. Formerly John's Farm, the property dates back to a land grant in 1830 to John Bayliss, the son of a Second Fleet soldier. Throughout its history it has had associations with the notorious bushrangers, Ben Hall and Johnnie Vane, and the explorer William Lawson, who loaned the sum of 100 pounds to build the house. The Cox's Road (the original road from Sydney to Bathurst) used to run through the property and for a time it was an Inn, known as The Barley Mow Hotel. We are very happy to say that, after a 140 year absence, the property once again holds a liquor licence. Enter the site to learn more about the distillery, our products and where to find us.
