Five native botanicals, in addition to Juniper Berries, are infused in spirit and gently distilled to produce Bathurst Dry Gin. Lemon Myrtle and Finger Lime give a zesty, citrus character, while River Mint and Iron Bark deliver a herbal quality, balanced by the subtle nuttiness of Wattle Seeds and the resinous quality of Juniper Berries. Finger limes are native to the Australian rainforest and exhibit a wonderfully fresh, citrus flavour, similar in many ways to an ordinary lime, but subtly distinct. High purity spirit is infused with whole fruit and gently distilled to extract all of the fresh lime character in this uniquely Australian Wild Lime Vodka. A liqueur style schnapps, produced solely from a controlled blend of freshly pressed red and green apples, from which we use only the free run, cloudy juice. This is reflected in the taste, which delivers a delightfully crisp apple flavour, with just the right balance of sweetness and acidity. A uniquely Australian Gin |
200 years ago the NSW Corps deposed Governor William Bligh (formerly Captain Bligh of the S.S. Bounty prior to the infamous mutiny led by Fletcher Christian) in what is now known as the "Rum Rebellion". You too can rebel! 300 bottles from the first cask of rum produced are being offered by way of a Founder's Rum Bond, which can be exchanged in 2010 for a signed and numbered 70cl bottle of cask strength, overproof rum. The bonds display the Stone Pine watermark and seal and are individually numbered and signed by the distiller. This may just be the ideal gift for that person who has everything? Made in the traditional European style, our peach schnapps is a straight fruit spirit, made entirely from fresh peaches. The French would call this "eaux de vie", which translates as "water of life". It has a delicate peach aroma, which follows through on the taste, with a clean, dry finish. Traditionally chilled and enjoyed straight up, or add to champagne for a bellini with attitude. The quintesential plum spirit particularly associated with the Slavic regions of Central and Eastern Europe, where it is often home distilled. A clean plummy aroma is followed by a dry, fruity palate and quite a long finish, though with very little of the bitterness often associated with this style of product. Traditionally enjoyed neat. Distilled in the more refined "prima uva" style from Barbera wine and marc produced by Vale Creek Wines only 15 minutes drive from the distillery. Grappa is the most popular spirit in Italy, where it is often drunk neat after a meal as a digestif, added to coffee as cafe correto or to the left over crema from an espresso as rasentin. Bramble Liqueur (NEW) |

When we were offered a parcel of brambles (better know in these climes as blackberries) from a local berry farmer, we thought they would make a great autumn release liqueur................. and we think they have! We blended a small amount of apricot spirit in to round out the flavour, with a touch of sugar for sweetness. The colour is a stunning deep purple. Drink neat, over ice, or treat yourself to a "Jam Doughnut" - sugar the rim of your shot glass, add a nip of bramble liqueur and carefully top with cream - voila!
